Alpha-galactosidase (α-GAL) is an enzyme that breaks down complex molecules for cellular reuse. It's also known as α-galactosidase A or α-GALA.
Here are some things to know about alpha-galactosidase:
Function
Alpha-galactosidase breaks down terminal α-linked galactosides from macromolecules, including glycolipids, glycoproteins, galactomannans, and galacto-glucomannans. 
Production
The body produces alpha-galactosidase in the mouth and pancreas. 
Applications
Alpha-galactosidase has many applications, including:
Food processing: Alpha-galactosidases can reduce the concentration of nondigestible oligosaccharides in soy products. 
Healthcare: Alpha-galactosidase can be used to treat Fabry disease, a rare lysosomal storage disorder. 
Enzyme deficiency
A deficiency of the alpha-galactosidase enzyme causes Fabry disease, which leads to tissue damage and organ failure. 
Variants
There are different variants of the alpha-galactosidase enzyme, with two main groups, A and B. 
Digestive enzyme
Alpha-galactosidase can also help break down galactooligosaccharides (GOS), a type of non-absorbable fiber found in beans, root vegetables, and some dairy products.
