Fucoidan is a marine polysaccharide composed of fucose and sulfuric acid. The content of fucoidan in brown algae is very low, the content in fresh kelp is about 0.1%, the content in dry kelp is about 1%. Fucoidan is a very valuable seaweed active substance.
Fucoidan is produced by brown algae to protect themselves in harsh environments. When brown algae is exposed to direct sunlight, the algae polysaccharide can prevent its drying and act as a moisturizer. At the same time, it can prevent bacteria from invading the injured area and improve antibacterial strength and immunity.
Fucoidan is different from mushroom polysaccharides such as β-glucan, its structure has sulfuric acid group, which is an important characteristic. Because of the presence of sulfuric acid group, fucoidan can specifically bind to Helicobacter pylori.
