It is imperative to distinguish the two major groups of this genus.19 Propionibacterium is differentiated in relation to where they are found. The first group of propionibacteria colonizes the human skin. The second strain, often denoted as classic propionibacteria, is identified from raw milk. Four species constitute this latter group, namely Propionibacterium acidipropionici, Propionibacterium thoenii, Propionibacterium freudenreichii, and Penicillium jensenii. P. freudenreichii is extensively used in cheese making because it ferments lactose to acetate, propionate, and carbon dioxide and at the same time enhance flavors through lipolysis of fatty acids.22
